The owner-chef, Taishi Yamashita, after working in a French restaurant of Hotel in Nagasaki, he honed his skills in French cuisine working in places such as world gourmet guide award restaurant “”Joel Robuchon”” and “”AMOUR”” in Tokyo. In 2016, he opened “”TTOAHISU”” in Fukuoka, his hometown.
“”TTOAHISU”” only offers the chef’s selected course, under the theme ‘Japanese culture x French cuisine’. Serving dishes such as “”Vichyssoise”” made with almond and dried mullet roe. Its specialty, the double consommé made with whole chicken, pork bones, and a dried flying dish is available all year round. The line up of alcohol includes Japanese sake and shochu, as well as wine. Even guests from overseas can enjoy the unique pairing of Japanese alcohol with French cuisine. To make the most of a visit to “”TTOAHISU,”” it would be best to request a drink that matches with the dishes.
Upon entering the restaurant, the first thing that catches the eye is the artistically rendered Japanese paper. All around, space is designed so that guests from abroad can enjoy Japanese elements, and local guests can enjoy the touches of French fusion. It exudes Chef Yamashita’s unique tastes. The tables are arranged to give a sense of spaciousness; there are 10 seats in the main dining area for families to use. The kitchen is surrounded by glass, designed to face the customers.
