New Chitose Airport, a gateway to Hokkaido, has not only handled a large number of domestic flights but recently also received an increasing number of international flights. Conveniently located with direct access to the international terminal and connected to the domestic terminal by a walkway protected from rain, Hotel Portom International Hokkaido opened in February 2020.

The main restaurant of the hotel, Tateru Yoshino Portom International Hokkaido, boasts a captivating, spacious dining area with a high ceiling. At the center of the dining room, guests are welcomed by four artworks of Hikoju Makie inspired by nature in Hokkaido.

The restaurant is helmed by Chef Naoki Kanemaru, hailing from Osaka. He engaged in the opening of Taillevent Robuchon (currently Joël Robuchon; three-starred) in 1994 and worked at Restaurant Crescent (permanently closed) and La Baie in The Ritz-Carlton, Osaka, before he moved to Hokkaido to work at Tateru Yoshino Portom International Hokkaido in 2020. Fascinated by the bounty of ingredients available in Hokkaido, he hits the road on days off to explore new ingredients around the island.

Supervised by Grand Chef Tateru Yoshino, who visits the restaurant every month, the food menu features specialties, such as Tourte (pies), as well as seasonal dishes made with locally grown ingredients. Located in Hokkaido, rich with all kinds of ingredients, ranging from vegetables and marine products to livestock and dairy products, the restaurant offers entree and homemade seasoning recipes featuring special local products, such as mayonnaise and sabayon sauce made from local passion fruits, and venison tourte made with Ezo deer meat hunted by Matsuno, a hunter from Shiranuka. They are complemented by marine products, including surf clams and whelks from Tomakomai, sea urchins from Shakotan, and abalone from Hiyama.

The drink menu offers a wide selection of wines, especially Tateru Yoshino’s iconic French wines. These wines can be paired with cheeses served from the cheese trolley loaded with locally produced cheeses only, such as Fromage de Biei from Biei Farm, after the entree course. There is also a non-alcoholic drink pairing menu, including homemade drinks.

The main dining room with a modern interior in monochromatic tones seats up to 86 guests, complemented by a private room seating up to 12 guests. Ready as an air gateway for travelers of different ages and nationalities, it is perfect not only for gourmet gatherings but also for meals with international guests.

The beautiful interiors of the hotel reminiscent of an art museum also makes the restaurant worth visiting. Adorned with ukiyo-e paintings by renowned painters, such as Katsushika Hokusai and Utagawa Hiroshige, and artworks and installations created using plastering and dyeing techniques, Portom International Hokkaido offers art tours for diners before and after their meals on prior request to hotel staff.
