A one-star restaurant in Osaka, a liaison connecting traditional French cuisine and Japanese terroir
A 3-minute walk from Shin-Fukushima Station in Osaka City. LIAISON, a one-star restaurant, is quietly located in a quiet residential area off the bustling streets. Chef Yuji Tsuji, who is well versed in traditional French cuisine, offers Japanese French cuisine that can only be tasted and enjoyed in Japan.

Tsuji moved to France after training at La Maison de Graciani Kobe Kitano. He studied traditional French cuisine in auberges under Serge Chenet, who was awarded the Meilleur Ouvrier de France (MOF) at Au Trotthus in Alsace and the one-star Entre Vigne et Garrigue in Avignon. Then he returned to Japan to work as the chef at Carte Blanche in Osaka. In February 2021, he became the chef of LIAISON. Under a real powerhouse, the restaurant was awarded a star in the same year.

As the name suggests, Tsuji’s French cuisine is a liaison with ingredients unique to Japan. On offer are a variety of dishes that allow you to experience the terroir of Japan from season to season. He buys wild game, such as Ezo deer, from a hunter he knows in Hokkaido, and pike conger, red sea urchin, flatfish, and conger eel from a fishmonger that specializes in seafood from Awaji Island. He thus treasures the liaisons among local producers and their regions.

Specialties on the menu are a combination of Japanese and French liaisons, conger eel and foie gras. Tsuji says, “I want people to enjoy the subtlety of adding Japanese ingredients and spices to each dish of classic French cuisine, such as using sake lees in sauces and replacing black pepper with sansho pepper.” The wines are selected by Manager Tomohiro Miyagaki, who is also a sommelier. We would recommend pairing French wines with Japanese wines and sake from Hokkaido in the fall and winter and from Kyushu in the summer.

The interior of the restaurant is based on a white color scheme, creating a relaxed atmosphere. The spacious open kitchen can be seen from any table in the dining room (22 seats). We would like to invite families, friends, colleagues, and couples to enjoy the lively atmosphere of LIAISON and Japanese French cuisine prepared by Japanese chefs.
